I'm pretty sure Usain Bolt has been training for much longer than 5 years and I'm equally sure that he hasn't had any knee surgeries yet.

Pretty sure you made a thread asking question about general physical fitness. So, in no way are you qualified to pass judgement on this type of training regimen.
You work directly with professional athletes? Great! Ask them why they don't do CrossFit, then. Boom. You've got the answer to the question that you asked.

You must have missed the part about the trainers, right? The two I got to spend the most time conversing with were Alan Aragon and Rich Tuten, but there have been others at different levels that I've met. They are certainly the authority, not the players, although living where I do I have known plenty of them as well.

Since you asked specifically about why the *athletes* don't do CrossFit in your earlier post, I was trying to stay on topic.
So, then, how about the trainers you know, Aragon and Tuten? Why do they say they don't train their athletes that way?
Chad Pugh is the S&C Director at Tennesee Tech - MS, CSCS, SCCC, USAW, CrossFit Level I - he obviously endorses CrossFit.
Then there is also Eric Burkhardt, 22 year vet of D1 coaching and one of the first people to ever be CSCS certified and also a USAW certified coach. He endorses CrossFit, too.
Like almost everything in the fitness world, there are people who like it and people who don't.
