Today it will be salisbury stk. burgers, w/ fresh green beans. Salisbury stk. burgers made from ground beef. w/ a spread of mushroom soup w/milk added. Pistachio pudding for dessert.
Pork Tenderloin marinated with olive oil, garlic and cracked black pepper (cooked on the grill), broccoli salad, and either some brown butter noodles (fell in love with these during a visit to Amish country).
Instead of making a whole lasagna, I make rolls. Take a boiled lasagna noodle, lay it flat, spread your meat sauce all the way down it. Then do the same with your cheese. Then loosely roll it up and put it in a baking pan with a thin layer of sauce on the bottom. You can fit quite a few rolls in the pan. Top them all with more sauce and cheese and bake it like you would your full lasagna. When it's done, you have individual lasagna rolls that you can freeze for later.
Another method is to follow the same instructions but, instead of rolling it, you can fold it in thirds. Fill the middle third of the noodle with the meat sauce and cheese. Fold one of the ends over that and put the meat sauce and cheese on top of that. Then fold over the last third and top with more sauce and cheese.
