These are my staples ( more than 15 I think ) :


Beef :

Boeuf Bourguignon
Beek Teriyaki with Noddles and Wok Veggies
Carbonnade of Beef
Bolognaise ( with Veal and Pork mince)
Beef Provencale
Steak and Ale stew
Steak with Bearnaise

Chicken :

Chicken Catalan ( roasted red peppers, chorizo, butter beans, onions, garlic, tomatoes, splash of wine, herbs)
Chicken and Pancetta Salad
Breton Chicken ( white wine, pancetta, onions, leeks, a little cream, some herbs)
Thai Chicken Curry
Cajun Chicken
Chicken Bhuna
Chicken Teriyaki with noodles and wok veggies

Fish:

Cod Gremolata
Haddock Mornay
Monkfish, Seabass, Red Mullet, Mackerel, Salmon usually marinated, steamed or pan fried with veggies
Mussels with Thai Broth
Mussels Marinieres


Lots of Pasta dishes and lots of Salads.

Accompaniments are usually steamed or wok veggies, couscous, rice or green salad.

Beef (winter):
Goulash
Tacos
Enchiladas
Taco casserole
Mexican lasagna
Beef (summer)
steaks
burgers

Pork (summer)
chops on the grill
BLTs
(don't eat much pork, I need RECIPES)!!

Chicken (winter)
Thighs with mushroom/sour cream/wine sauce
Baked BBQ thighs and legs
Rock Cornish game hens with wine/tarragon sauce
Chicken (summer)
thighs and/or legs on the grill, with either Sweet Baby Ray's or Emeril's Essence or Herbs de Provence (sp?)
Beer can chicken

Pasta/Casseroles (winter)
Pasta/broccoli/ham w/ cheese sauce
Spaghetti
Homemade pizza
Pasta (summer)
pasta/seafood or ham/peas w/ mayo, mustard, dill, cukes
potato salad
onion & cukes w/ sour cream/vinegar/dill

And this list is without whatever side dishes I add.

Germany:

Beef:
Beef Tatare on Garlic Bread
Goulasch
Beef roulade ( beef rolls?)
meat cut into stripes in cream sauce with mushrooms, swiss style ( Zuricher Geschnetzeltes)

Pork:
eating pork not very often....


Chicken:
Chicken Satay with Penutsauce
Spicy Thai Green Curry with chicken
Tom Kha Gai ( yes, these are not really German dishes, but we love the Thai food and make it a lot)



Seafood:
simply grilled fish filets without breading and vegetables
Seafood pasta
grilled tiger prawns in garlic

Boy I'm learning alot. Beef tartare is not something I would ever think of as a "rotation" dish and so many of you eat a lot of fish- I know I should eat more and introduce my kids to fish but I wasn't raised eating fish either.

Also some have what sounds like dishes which would make me dirty up every pan in my kitchen. Thanks to everybody who participated and I hope more will join in. Especially love the folks who admit to carryout, delivery or other busy-day meals.

I live in Northern IL, and my rotation tends to vary with the seasons, but here are some of my staples:

Beef
Swiss Steak
Pot roast
Hamburgers
Meat sauce for spaghetti
Meat loaf
Steaks
Beef and Barley soup
Beef stew over biscuits
Lasagna
Enchiladas

Pork
Pork Roast
Pork Chops (pan fried) or grilled
Ham steaks
Bacon and sausage
Smoked sausage (with either pasta or potatoes and onions)

Chicken
Chicken and Broccoli Alfredo
Chicken Pot Pie
Chicken noodle soup
Chicken tenders with wild rice and gravy

Other
Turkey breast (or whole at Thanksgiving)
Salmon Patties

I am always looking for new recipes and sometimes I get lucky and find one I love. I love to cook, and I love watching my hubby enjoy his food. Nothing says love like good food!!!!
