I'm doing ours at 325 for 25 min a lb for med rare. (Internal temp 130-135)

Let roast get to room temp (2 hrs) and make sure it sits after cooking for 20 min.

Happy New Year all............

Made it to 10PM and then I couldn't stay up any longer.

Had the chicken parm and it was just OK...I think I left it in the oven a little too long.
Back to watching the waistline in 09.

Elston you have had this cold way too long. So sorry you are not quite there.
My DH's answer to everything when I do not feel well..give her some apricot brandy. That does help with a bad cold and bronchitis but not with the stomach bug.

I'll be back...off to the showers I go and today we are going to try to get down the decorations. I think I would like to leave the window candles up as they look so nice against the snow....

Morning, all, and happy 2009! I have to say that I'm glad to leave 2008 behind me, and I hope that this year brings us all brighter days.

We made it to a little past 10 last night; played some Scrabble with the young'un who stayed the night with us, had some bubbly (alcoholic for the grownups, sparkling grape juice for the kiddo), then we all went to bed. I figure there's nothing wrong with toasting the new year at Newfoundland's midnight instead of ours.

Roast ham for dinner today, I think, with sweet potatoes and other veg to be determined. Kids are coming over mid-afternoonish for an early supper, by which time hopefully all the decorations will be taken down and put away. And on that note, it's time to start hauling the boxes back down from the attic and get started!

I fell asleep during the 10:00 news but DH woke me up at midnight to say Happy New Year to me! So sweet! I called both of my kids, Amber in CA and my son here in NC to wish them a Happy New Year. My son was already asleep and Amber was just about to leave to a party at her work place (it was only 9:00 in CA). We enjoyed watching the entertainment and festivities for a bit and went to bed. For some reason I could not fall asleep then until about 3:00 am so I'm a little tired today. I hope I can muster up enough energy to do a little window washing and odds and ends in the house while the weather is nice.

Watched the fireworks coming from the Space Needle last night. Very impressive! I'm surprised I stayed up that long. Not sure what's for dinner..
will check in later. Need that first cup of coffee

Spareribs tonight. I have leftover artichoke cheese dip from last night and I'm thinking of using it in a kind of scalloped potato dish. I'm thinkin it could turn out to be a good combination, right?

I might take down some decorations today, but I really hate to. Everything looked so nice this year, and the tree has been the best ever...so fresh that not needle one has dropped from it yet (and it didn't fall over once, either).

Sounds great to me gentlearts...but everything sounds great to me lately so not to sure if I'm one to give an opinion! If lacey says it sounds like a keeper then I would listen to her!!

My dear hubby has set off to my moms restaurant to bring me back some food.

I will be having chicken, cabbage, black-eye peas, cream potatoes, mac-n-cheese and cornbread. Topped off with some banana pudding.....

For some reason, I did't want any ham.

So this tired ole bod is heading back to bed to await my feast...what a great New Year's Day! no cooking....
