When it Pittsburgh, PA years ago, we were served Butter Pecan ice cream at an in-laws home. Ever since then I have loved it.
Tonight we had Venison burgers with cheese, mixed vegetables (broccoli, sugar snap peas, carrots, and baby corn), cinnamon apple sauce, salad, sweet tea and cherry pie and ice cream for dessert. DH has a healthy appetite!. Venison from my deer from last year. So delicious.

OOOps forgot to say - dinner tonight was beef ribs cooked in bbq sauce with steamed rice and broccoli (what, broccoli again!?) and all went down well with kids, DH & all phew... mum lives to cook another day

I spotted broccoli today plundering in the freezer. Found a full box of Velveeta too...Having a vision...
Man oh, man, but I'm glad this week is almost over. I am whipped. Still have one more day to get through, but at least it doesn't feature any performance evaluations (delivered six and was given one this week), vendor meetings (three of those), department meetings (one marathon one) or other similar events. Maybe tomorrow I can finish reviewing my staff's December work at last, since January is now just about over.
Spouse tuned in nicely to my mood and fixed a big pot of chili with skillet cornbread for supper tonight, and I felt well-loved and much happier afterward in consequence. He's a good guy.
He was telling me about some recipe he found on line somewhere, that he wants to try in the summer, sometime when we have the college boy home for a visit, the daughter's sig-other, and half a dozen or so other major carnivores all here to help consume it. It's called Bacon Explosion, and it sounds like a heart attack on a plate, which of course means that our son would love it.
You start out with two pounds - yes, you read that right - of bacon. Separate the strips, and weave them into a rectangular mat. Take two pounds of mild Italian sausage and press it down onto your mat of bacon, then roll it up jelly-roll style. You affix it in place somehow - I'm thinking butcher string or something - then slather it in barbeque sauce and put it in a smoker for two or three hours. Slice it down in 1" thick slices, and be sure you have a dozen or so carnivores with cast-iron gallbladders standing by to eat it.
Just seared the meat in an iron skillet, meanwhile slowly browned some chopped onions in another pan, then put the two together with some homemade bbq sauce and bubbled them for about 40 mins on low. Two hours would have gotten the beef falling apart tender, but 30-40 mins is OK too. A bottled sauce would be good also, I was just using up freezer stuff

I am addicted to melted Velveeta on broccoli - just a little bit - with maybe some crumbled bacon on it - heaven. What will I do when I go home???
