Can you post a recipe for the arroz con pollo, that sounds really good. I was thinking about making cajun chicken with rice tonight but I may change it to that depending on whats in the recipe.

I am going to oven roast a whole chicken with a variety of herbs and spices! Don't have much more planned. my middleschool son has a track meet, so the real dinner is up in the air!

MovingTo-Basically same as it's chicken and rice. Brown chicken pieces in olive oil, remove. Saute onion,peppers and garlic then add rice and coated with oil and let brown slightly.
Add broth, tomatoes, saffron, tumeric, salt/pepper. Top with browned chicken. Cover, cook for about 30 min. Add frozen peas if desired.

Tonight i am making a thing we call Super Supper

Scramble hamburg (about 1 1/2 lbs.)
cook two boxes Bird's Eye----vegetable and shells in garlic butter sauce
1 pkb Success rice (boil in bag)
1 can stewed tomatoes
garlic powder for taste
3-4 Tablespoons worcestershire sauce
parmesan cheese


Separately cook hamburg with garlic powder and worcestershire, rice, and vegetables according to directions.
Then combine everything together in big skillet..add parmesan and tomatoes.

I like to make this up early in the day, put in casserole dish and just heat in the oven at dinnertime. If you want, add more worcestershire and parmesan to your liking.

Well won't be making that today as I don't have saffron and tumeric in the house. Will have to pick those up next month on grocery run. Sounds good though.

Sorry, had a decorating emergency to attend to....... yup, thats the basic recipe. I add sauteed onion and poblano peppers to the rice, and then stir in fresh diced tomatoes and chopped cilantro at the end of the cooking time, right before I serve........ BTW, got my first widdle baby tomatoes on the vines, they are sooooooo cute, hope I can let them get ripe, I lovelovelove fried green tomatoes!
