You can cook them up (either boiling or baking), scoop out the cooked insides into a freezer bag and freeze them, then use them in a sweet-potato pie when the weather cools off enough to turn the oven on. Tastes something like pumpkin, but with a unique component all its own. Or perhaps that's the bourbon we add to the filling mixture....

Tonight was stir-fried shrimp with the Savoy cabbage from the last CSA box, mushrooms, bell pepper and green onions, with lo mein noodles.

And there was just enough left for a couple of lunch-sized portions, to keep the co-workers drooling when the spouse heats up his meal in the office microwave. He generally has a pilgimage of colleagues parading past his desk at lunchtime, all saying variations on "what on earth are you eating? It smells so GOOD", and I expect there'll be more of the same when he takes tonight's leftovers for lunch.

Partially cook them in the microwave, then slice them thin and sautee in olive oil till crispy. remove from pan onto paper towel and salt immediately. devour.

Came home worn out and did decide a tuna melt would be way ok. toast an english
muffin put tuna and a tomatoe, and cheese. then bed. oh I did broil it in the toaster oven.

I also have a nice recipe for sweet potatoes:

2-3 large sweet potatoes (peel and grate very thin)
1 onion diced

Put all in a bowl, add 1 egg, about 2-3 table spoons of flour, maybe some grated cheese or cream cheese, salt, pepper, some chili, thyme and marjoram.

Heat oil in a skillet and use a table spoon to put spots of the mixture in the skillet. Fry from one side till golden brown then turn around. Take them out and put them on paper towels to let the oil get out a bit.

Very yummie but not a diet food

Okay, my mom had too much to do so I had to cook the meat balls with cream sauce yesterday evening

Wasn't in the mood for this kind of food so I tossed some left-over maccaroni into a pan with a sprinkle of oil, added half a diced onion, 6 cherry tomatoes cut in pieces, two large table spoons of cream cheese, basil, oregano, salt, pepper and parmigiano cheese. Nothing special but nice though.

Pasta with thick Meat Sauce... Meatballs, Sausage, Beef of some sort...
Green Bean Salad w/ OBVIOUSLY Green Beans, red onion, tomatoes, and balsamic dressing...Fruit Salad...Buttery Crisp Garlic Bread... The Italian MIL cooking dinner... not me... No McPasta Cholestorol Boy is happy about it... sure to be cake readily available as well... w/ Lambrusco (Did I spell that right?)

Have no clue yet---today is that dreaded grocery shopping day! Ugh!! We usually avoid all the stores on Fridays but somehow we didn't plan well this week and so here we go! Once we get back I will post what's going to be dinner here.
