Hi folks

Slices of eggplant roasted with olive oil, topped with fresh mozzarella, fresh tomato slices, and pesto. Side of roasted sweet potato slices.

Tomatoes and basil are from my garden, eggplant, garlic, and sweet taters from the farmer's market, and mozz from my need to make space in the freezer .

This turned out fantastic, suitable for serving to guests in the future! Soooooo tasty.

Yesterday:

Canned smoked tuna, canned by guy at farmer's market, frozen broccoli, frozen roasted herb potatoes (cleaning out the freezer!).

Side of homemade pickled vegies from my garden: green beans, zucchini, onions, carrots, red bell pepper, mustard, bay leaf, rosemary, anise seed, wine and cider vinegars, turbinado sugar... I forget what all I put in there, which is a shame because they turned out so great! Apparently next time will be different.

Especially with garden food, it is so much work to grow that I don't want to waste it!

My freezer is bursting at the seams with garden produce, this time of year. Yes, I literally have a bungie holding the door shut. But I squeezed in some more pickles today! (Who knew there was such thing as freezable homemade pickles? Not I, until this week.)

Sauteed in olive oil garlic, onion and red bell pepper from my garden. Over cheesy rice and topped with basil, just picked, from my garden.

:envious: of NilaJones' garden!

I scrapped the chili for some ground beef hash I found beside it. Warmed it and the chopped up 1/2 a sweet onion on it and a lot of ketchup and a healthy dose of Valentina's hot sauce.
