So your dinner is rice topped with potatoes? Sounds yummy but carb laden! Kinda like a fried shrimp poboy here in Louisiana---fried shrimp (or oyster or catfish) on a grinder (sub) roll.

What do you season it with, and where can you get flattened rice?

Beef stir-fried in peanut sauce with Simply Asia Sweet & Spicy Saigon seasoning (I took the photo before I sprinkled the seasoning on it, oops!) -- I bought a bottle to try since my local Hannaford had it on close-out and it is WONDERFUL. I have to go back and buy more before they stop selling it!!



Lots of veggies too ... tonight it was stir-fried carrots and asparagus and yellow & orange bell peppers and sweet onions and mushrooms. OMG they were delicious together. Sometimes I use rosemary-garlic seasoning on them -- very very yummy!!

I had my usual green salad about an hour before -- I tried a new salad dressing that I didn't like much (Vidalia onion -- sounded great but it was SO sweet -- I checked and saw that the second ingredient was SUGAR, I should have checked before buying! ). Luckily I have the dressing in a little Fiesta fruit bowl on the side, so I was able to dump it and get my favorite fat-free Italian instead -- a bit on the salty side, but delicious.

Thank you, it was!! I am trying to eat a lot more veggies these days, and wow, they are so good.
