I'm kind of lucky in a way, there's a Chinese restaurant that's about 5 minutes from my house that has a "healthy" menu section. One of the selections is chicken and broccoli, and it's steamed. It comes with white rice, but hey, that's not that terrible. They have other options too, but I always get the chicken and broccoli.

I always try to buy fresh meat and cook enough for several days worth of meals, but I also have frozen chicken and veggies. Also, frozen veggies are like a buck/bag and you can eat as much of that as you want.

I get one day off if I'm lucky anymore, and I have to do some amount of cooking done on that day. I'm usually cooking my proteins on that day, and doing my rice and veggies for that dinner. I just have to keep up with the dishes but my rice cooker/steamer doesn't take long. I'm pretty simple though lol.
Have you ever looked into an Instant Pot?

I totally understand the OP. The past year or so I have struggled with getting healthy takeout too. My lifestyle changed when my work environment did. I started working somewhere that provided breakfast and lunch.

I am also single. I also started volunteering and doing other stuff that kept me out late 2 week nights a week. Weekends usually mean a brunch and dinner with friends. Do you know how difficult it is to rotate food when you only eat 5 meals a week at home? You can't create big batches of things because you aren't home. It is hard to get the right amount of produce when you are out 4 evenings a week. I leave for work between 7-8 and get home at 6:30 or 7 most nights. At least one night a week I am home after 8.

I had to cancel my CSA due to food waste. I started getting produce at the overpriced markets on my way home. Grocery shopping is a tricky puzzle if I don't gave my schedule worked out for the week on the weekend. I ate way more from the Whole Foods hot bar in the past year. I did all the food delivery services. Cooking became too annoying since I wasn't home to eat my leftovers and cooking meant a trip to the store first. And I like to cook, but it is not happening much now.

I would kill for more options with lots of veggies. Now I load up at lunch just in case the day doesn't turn out the way I intend. And keep carrot sticks at home for backup.

But it is pretty hard. And yes I know it is a first world problem that my dinner problems are a result of meals at work. It us a blessing and curse I need to solve for 2016.

I have one. It is great. When I can cook! Pressure cooking is great for slackers.

I'll look into these a bit more when I have time. I've never seen these before. I don't order anything through the internet though, so unless I can find one in stock at the local mall I may never be able to get one anyhow.

OMG. Why?!!!

I have that pot and a larger one on my maybe list from Amazon. I'll only get it if I would then get rid of my crock pot and rice cooker.

Could you do a pork loin in this? It's more vertical than horizontal. Does that make a difference?

I just don't have a way to buying stuff online.

I could easily get a credit card or switch to debit, but I have a feeling that if I had the power of debit, I'd probably bankrupt myself lol.

Ok. You know yourself so that is wise.

You can also pick up a few cookbooks that specialize in meals for one or two people, and Allrecipes.com lets you adjust their rated recipes for the number of servings needed.

Get a slow cooker and one or two good pots and pans and you should be good to go. Most of us have been in your shoes at one time or another and nothing beats coming home to a good meal.

I agree 100%. We are actually looking into BA for us too. Not because of long hours etc but it sounds like fun and could save us some money for not going out to eat

It is too much food if you are single. Lots of packaging. And some recipes do take a lot longer. They typically state 45-60 minutes. Some require tons of pots. I found it too time consuming. And I didn't have time to make even 3 elaborate meals, or eat them in a week.
