I rarely buy them. Thigh meat is so much better.

I guess it depends upon the local market, but there are plenty of vegetarian restaurants that are located around the country and are doing quite well.

People made have a lot of really good suggestions for the OP. I would just add that, in addition to cooking most of his own meals, maybe he should also try a few local vegetarian restaurants, even if he is a meat eater.

You may find a lot of vegetarian dishes in the wealthier parts of Orange County, but you don't see many located in the rest of the country. In general, in a city of 500k, you will generally find one, maybe two if it is a university town.

You will find some vegetarian dishes in certain ethnic restaurants but not a purely vegetarian menu.

Shaun-T Prep foods will deliver super-healthy organic meals straight to your door, home or office, anywhere in the U.S. On the website it says meals can run "as low as" $9.95 including delivery. If I could afford it, I would do this in a minute.

I pay nearly as much to create a dinner using the food bars at Whole Foods and mine's a long drive too.

Being a single person, I find that if I go to the grocery store and buy all the ingredients for say a healthy salad, or most vegetable dishes, I can't eat it all up before everything starts to wilt or spoil.

I would rather have the thighs with the bone in, there is more flavor. The only time I consider boneless chicken is for grilling and then we use boneless breasts.

Thanks for the tip. There are at least two vegetarian restaurants less than 10 minutes away from me, but this information could definitely come in handy in the future since I am not a cook.

The OP lives in Miami, and while he may have to drive a bit, Google lists several vegetarian eateries for that city. He could pickup extras and refrigerate them for future meals.

Another healthful meal supplementing strategy (making the majority of meals at home is best IMHO; even I do it and I am no cook) is to scout out health food stores. Some of them have frozen food cases where they offer prepared vegetarian meals. Some large chain supermarkets do the same.

I've never been to a Panera. But they look good. What's the problem with it?

I agree. I was pointing it out to the poster who said it was hard to find boneless, skin on chicken breasts. It depends for me. Bone in has more flavor. Sometimes I want speed, so frozen boneless thighs fit the bill. Better than boneless breast.
