Made and had a salad while listening, singing to Martina McBride.

Romaine, garlic, paprika, Italian diced tomatoes (canned), kippers, half an avocado, anchovy paste, sun flower seeds, olives, croutons. Light on the feta and bleu cheese, lighter on the Parmesan by taking one of the "empty" containers and giving it the last rinse into the salad.

Consumed it with a mug of skim milk.

This was yesterday's dinner. I have class on Tuesday night, so on Sunday, I made Maggie2101's recipe for Tuna Noodle Casserole without canned soup, which she was kind enough to send to me, at my request.

It was really delicious! So much better than the one I am used to. It also freezes well and it's a good dish for my class night. DH really enjoyed it also.

I served it with cucumber and red onion salad. We had apple cider to drink. I made a small one, since right now, only the two of us are at home. We'll probably have the rest for lunch tomorrow.

Not sure about tonight but last night I had delicious steak frites - so good - seasoned and cooked perfectly.

Maybe salad tonight.

We always do ours on the charcoal grill. When we lived in NM, of course we had them done for us. I have tried them on the stove top or toaster oven but it is just not as easy or as good. Of course, instead of 15 or 20 lbs like we used to get, we now stick with more like 10 lbs or less.

Think we will have grilled pork chops, snow peas, bok choy and egg rolls. I might add a few pot stickers: I love those things.

SO requested rib eye and not much. That translates to oven warm bread and a small salad. Shrimp for me. Crepes with Peach Mishap.

Crepes freeze well and come back in a hot pan in no time. A dash of powdered sugar, some fruit compote/preserve/honey, may be a spoon of ice cream. A perfect small bite for two on a week day.

It does sound good, but I must ask - what is "peach mishap"? Crepes sound wonderful and yes, they freeze well!

Company arrives today and they're not very adventurous eaters, so tonight we're having chili pie, zucchini fritters, and cole slaw. It's all make ahead with the exception of sticking the pie in the oven and 10 minutes to cook the fritters.
