Once I went to Applebee's and ordered a Margarita. I asked for 1 inch of ice. It was served in a mug. The server brought a half filled mug - maybe less than half filled. It looked pretty bad - like a drink that was half done. The bartender told the server that usually it's filled with ice so since I wanted less ice that I get the mug only half filled because they weren't going to give me 'extra' margarita for the same price.
From an alcoholic beverage perspective, that makes perfect sense. Your beverage is a serving. Because you shore to alter how it was presented, doesn't change the house pour.
I put very little ice in my drinks for the reasons you mention. In fact, that's why I love the self-serve drinks--I don't like it when restaurants put in too much ice (causing the taste to be diluted over time). I always assumed the over-abundance of ice in drinks was the restaurant's way of conserving soda or whatever drink is being dispensed, and most people just got accustomed to it being served that way.
If it's self serve they can go back and get more, so they aren't getting less by using more ice. But I personally don't like a lot of ice. In fact, at home I don't refrigerate my pop and usually drink it at room temperature.
I like ice. I am usually over it on the soda after about 8-10 ounces so it is a good way to make sure there isn't too much soda in the cup. And I like my soda to be super cold.

Is it so difficult to understand that ice takes up space, and that space (volume) is no longer available to fill with soda?
Not to mention the fact that ice melts, diluting the soda!
The soda coming out of the dispenser is cold, so actually ice isn't really needed anyway, unless, of course, you feel it will take you a very long time to finish your drink.
When I buy soda, whether at a self serve fountain or otherwise, I don't want any ice. I am spending $1 or more for that cup of soda, and I want full value.
I find it ridiculous that somebody sued Starbucks because they felt their latte was an ounce or so short, yet they will fill their cup with ice and get 1/4 the soda they paid for!
Goodness. Who needs that much sugar water, ice! One of life's little pleasures. And since it's self serve, and if I want to continue gacking up my blood sugar, I'll pour myself another ! The 15 steps it will take will help with my daily cardio.

Some people really enjoy their ice, others would just as soon have no ice. It is simply a matter of likes and dislikes.
Yeah, you did, dear. Saying someone isn't "thinking outside the box enough" about soda and doesn't recognize the difference between more soda and less ice versus the other way around and not knowing what they're paying for is calling someone stupid. Please quit with the excuses - if you're going to be nasty and condescending, own it.
