Ok, so I used to buy pre-packaged deli meat like Oscar Myers and stuff, and noticed that it would remain good in the fridge for VERY long period of time.
Over the years, I switched to buying deli meat from the counter, such as Boar's Head and Troyer. What I've noticed, however, is that this stuff barely lasts a week in the fridge before it starts to stink. Am I doing something wrong? Or do they really just not last as long as the cheaper stuff?

My deli meat doesn't always last long enough to get spoiled. Back when my son was living here, we'd go through pounds of it a week. Now, since it's just husband and I, we tend to wait until something goes on sale, buy a larger quantity, then freeze what we're not going to eat within five days/one week. It saves us money by getting it on sale, and we usually have back ups in the freezer. So nothing is available to spoil.
Sometimes I wonder how long that chunk of meat behind the deli counter has been around.

In all seriousness, I DO have a friend who used to work at a Jewel Deli a few years ago - it never even occurred to me to ask her, but I will, and I'll let you know what she says!
Yeah, meat such as Boar's Head needs to be eaten in a few days. It can't sit around for 2 weeks like preservative laden Oscar Meyer and still be "good" to eat.
My sister in law manages a Publix deli and the off brands are put in a big washer, run through with water, added with all kinds of stuff, and poured into molds to set. They last so long because they are packed full of preservatives and crap.
Boars head uses the actual turkey breast which is why it goes bad so fast.
