Probably not much: we are going to a new restaurant here in town that has been opened only about 3 weeks. It overlooks the lake and is getting great reviews. They have a Sunday brunch for $15.95. hubby got a gift certificate from DD for fathers day. Because we have reservations at 11am, I don't think we will want much dinner. If we have anything it will be chicken spinach brats and left over mashed veggies.

Once on a car trip we didn't have much of a choice for eating and stopped at a MacDonald's where we had their Southwestern salad. We both thought it was pretty good so I adapted the recipe for home.


I brown chunks of chicken breast in annatto and seasonings, toss up corn, grape tomatoes, black beans and onions with a spicy oil and vinegar dressing to marinate, tear up some romaine, assemble and top with Southwestern dressing with a little cayenne in it. We top them with tortilla strips.


I also cut up a bowl of fruit - watermelon, green grapes, blueberries and honeydew melon. I also have a pan of rhubarb cobbler. This should feed us for a while.


I thought we'd be having smoked barbequed ribs. Yesterday DH prepared four huge racks of spare ribs. Looks like he did about three dozen, good skin-on hot dogs and a couple of pounds of country-style ribs, too. It was a major production and took hours. I think he dirtied every pot, pan and utensil in the house.


When it was time for our evening meal I asked what he wanted with his ribs and he told me he'd cooled and frozen the whole works. So I guess the ribs are in our future. I was really glad to see that he had cleaned and put away all the odds and ends he'd used to do his job.

We are moving tomorrow. Yeah! Virtually everything is packed. I don't feel like takeout so I bought convience food at the grocery store this morning. Dinner is going to be a bagged salad with beets in white wine and balsamic. A pork tenderloin premarinated in a balsamic/herb mix and Smiles.

Cooking a Sunday Roast for this evening's dinner, with likely leftovers for tomorrow. Chuck roast with all of the sides.

DS is cycling and isn't sleeping. He made a huge crockpot of unstuffed peppers to serve with mashed potatoes. I will tell you that once all this dental surgery is over I won't want to see a mashed potato until Thanksgiving.

Happy moving day tomorrow!!!!! I hope that it goes smoother than you can even dream it could. Have fun unpacking. (I love unpacking. It's like Christmas. "Oh my gosh, I LOVE THIS!!! My husband's mom is visiting us (she is from Denmark), and she specifically requested a Southern meal. I think all of those years of being married to his dad rubbed off (dad was born in North Carolina and is a good ole country boy). While they are no longer together, they are still good friends and whenever she visits (every 2 years), he is invited to visit as well and flies in from California.

Per my mother-in-law's request, we are having a honey baked ham, fried chicken quarters, black-eyed peas, collards with ham hocks, mashed potatoes and gravy, corn muffins, and banana pudding for dessert. I've been up and cooking since 5:00 this morning. I'll be dead on my feet at the office tomorrow, but she is more than worth it.
