Leftover corned beef & brussel sprouts for hubby. I cooked some baby red potatoes, we will both have those & I will have either some cold chicken or hot dogs, not in the mood to cook, but will also have fresh papaya.

I made the insanely easy and delicious Tic Toc baked Feta and Pasta recipe - https://www.foodnetwork.com/recipes/...-pasta-9867689

It came out beautifully! It was the second time I made it. I tweaked it a little bit - I can't help myself.

The fresh grape or cherry tomatoes and the block of feta combine to make a rich, pinkish tomato sauce, that is irresistible. A friend I mine suggested that to make it less salty, I add a block of cream cheese.

I doubled the tomatoes and added low-fat Neufchatel. It was delicious. Served with a light cucumber and radish salad and a glass of crisp Rose wine.

Dessert - half a pink grapefruit.

I had a barbacoa plate with jalapenos, rice and beans, and tortillas. This is from an excellent Mexican spot near me.

Plate looks like a mess, but it was a delicious mess

I forgot to take the tuna out of the freezer yesterday, so I ended up having roasted chicken thighs and cauliflower mash last night with pears w/ cinnamon for dessert.

Tonight will be sesame-crusted tuna w/ ponzu dipping sauce, roasted asparagus, and banana sundaes for dessert.
