About a month or so ago my husband and I had some oxtails at a Jamaican restaurant. They were incredible! Now I do make oxtails at home but I cook them in a red wine sauce. I did a bit of research and today I am attempting them Jamaican style at home.

I did not make my cucumber, tomato, red onion and mint salad last night. I will make that for a side tonight. I think I will make some rice for the oxtail sauce too.

Was going to make butternut, mushroom, goat cheese raviolis with bacon and browned butter, pinenuts....

But that is too much work.

Roast beef after nearly 20 hours in sous vide at 131 F. It came out pretty good. I'll skip the mustard rub and double sear next time though, wasn't pleased with the crust. Roast potatoes, carrots and mushrooms using the same liquid as the roast. Buttered EPCOT cheese bread.
