Crash hot potatoes? I've never heard of them so I looked them up, they sound awesome. Right now the family is hooked on melting potatoes but I think they will like those even more

I went grocery shopping this morning and I was totally sucked into the Cinco de Mayo display.

So, we are having a Tres de Mayo dinner - Home made guacamole. Blue corn tacos stuffed with sautéed Beyond Beef, red onions, sweet red peppers, a jalapeno. white sweet corn and diced plumb tomatoes. German cucumber salad with sour cream. But it tastes good with all the spicy food.

A glass of chilled beer.

Mixed berry cobbler for desert.

I had to look up Hot Brown. MUST try that.

Not any leftovers that appealed to me, so I am making a roasted cauliflower and chickpea salad. Creamy dressing with jalapenos and cumin, mix of greens

Made borracho beans and Birria Tacos.
Those tacos took 2 days to make!!!!
I made too much, now we'll be eating them all week!!
