Baked Potato Soup

6 potatoes microbaked, peel and dice into bite sized chunks
1/2 large spanish onion, chopped
5-6 green onions, sliced
1 package real bacon bits
8-oz sour cream
1 stick margarine
1 can chicken broth
1 can evaporated milk
8-oz Velvetta cheese
1/4c. plain flour
salt & pepper
hot sauce to taste (optional)

In a dutch oven or large pot, sweat chopped spanish onion and margarine. Add flour and cook into a roux. Add potatoes, chicken broth, and milk. Cook until mixture begins to thicken. Add remaining ingredients. When it's hot and the cheese is melted, serve and enjoy.

I forgot the cheesy spinach with dinner tonight. A green of some kind is a must with fried fish.

Pork chops with a baked potato.
If I can sweet talk my mom, it will be Velveeta and shells in place of the baked potato.

Haddock is getting very hard to find. It's being "fished out" I think.

I'm doing the *happy dance*!!! Neighbor just called, and he's got a pork loin on the smoker. Wants me to break out some of that sweet corn I froze a few weeks ago. Another neighbor is bringing potatoes & carrots, from his garden, so it will be a community supper, served on paper plates, & in the neighbor's garage. (Life is good!)

^^ LOL. We're having spaghetti with meat sauce & mushrooms. DH said it's been over two weeks. I didn't know he was keeping track!
