We were supposed to have these yesterday, but ended up going out to dinner with my parents instead. So, we had these tonight!

Oven-Fried Chicken Chimichangas - 28148 - Recipezaar

I use whole wheat tortilla's instead. They were so good.

Well I can hardly bear to look at this thread since we're on Nutrisystem, but in addition to our "sumptuous", plastic encased entree, I made roasted vegetables which were great. Eggplant, tomatoes, carrots, brussels sprouts, onions, mushrooms and broccoli tossed with a little olive oil and roasted at 450 for about 30 mins.
