When a co-worker (20 years ago) told me her sister died of food poisoning from a buffet, that was it for me!

Watch those disgusting videos of them taking the spoons from one food tray to lift another tray from the steaming table. Then placing it back in the food tray. Gross!

As for the business model - yes it's $10, so profit by volume. Chen's has simple offerings, yet packed all the time so by default is fresh. It's not $30 buffet quality, but to compare it to gas station sushi is kind of ridiculous.

Another good buffet made-to-order-fresh is Sushi Village for ~$20. Masa is very comparable.

There's something for everybody, if you set your standards low enough.

There is also the Minado in Carle Place, but they are closing down due to Covid-19

They were higher quality. They only opened certain hours of day for lunch and dinner with respite in between.
