Grand Rounds of the Lakes - midweek at Lake Harriett Bandshell stop and have a drink or an Italian ice and enjoy the scenery.
Walker Sculpture Garden
Minnehaha Falls
Try one of the great restaurants (Boroughs; Lurcat; Sanctuary; Bachelor Farmer; Alma - etc)

I would avoid the Fair completely.

Pop into Prohibition Bar for an aerial view from downtown Minneapolis.

Prohibition - Downtown Minneapolis - Minneapolis, MN | Yelp

It's a quick stop but a lovely space with a knockout view. I second (or third) the Grand Rounds suggestion and Prohibition Bar would be a quick jaunt off that route.

Also directly on the Grand Rounds, do go into the Guthrie Theater and once inside, ask for directions to the "Amber Room" and the cantilevered bridge: stunning views of the Mississippi River in downtown Minneapolis.

Cross the river from the Guthrie (give or take a few blocks) and pop into Kramarczuk's for lunch. You'll get a taste of the eastern/central European flavor that heavily populated this area of the country, particularly the northeast of Minneapolis which for that reason has been dubbed 'Nordeast'.

If you have younger kids with you, Canterbury Park (horse track) in Shakopee. Also has a card casino for 18+.

Might think about visiting Excelsior or Wayzata on Lake Minnetonka and consider a lake cruise.
