I used to raise German Shepherds and 3 people who had Shepherds from me shot birds over them. Asking around, I ran into several more people who hunted over German Shepherds. They make a bang-up bird dog. Hard working, easy to train, extreme prey drive. Basically, just take them out with a good trained dog and they will copy the behavior. Bingo. Trained gun dog in one afternoon. It's hard to beat that.

There used to be a fellow around here who raised Farm Airedales and lots of local hunters used those dogs successfully as gun dogs. All gone now, unfortunately. Great dogs. That was about 4 decades ago.

My son's Papillon hunted birds and worked the gun. She was hell-on-wheels for quail and dove. But he was afraid to take her out into the brush to work her for fear a coyote would jump out from under a bush and eat all 6 pounds of her. All her training consisted of following along as he trained his spaniels and copying what the other dogs did. She had a keen nose and could go into the tiniest hole to flush a bird.

Not much on fetching anything larger than a quail, though.

Can't beat a good day walking around, enjoying the scenery and watching a good dog enjoy his work. I hope you find a good place.
