Science, unlike the static dogma of religion, is a dynamic field. It changes as new discoveries are made. There was a time when the idea of microscopic germs causing sickness was routinely mocked because no one could see them, yet thankfully scientists didn't ascribe to your "whatever we don't know right now is not worth discovering" mindset.
There's a reason why science separate from religion. One is fact-based and fact-seeking, and the other definitely isn't.
Sure - some people use science to discredit faith. That's because faith so often chooses to deny even the most basic science.
I think some people, even atheists, are put into position to deny or discredit science because of the gatekeeping surrounding so much of it. As a result, people have been given a false dilemma of accepting the "evidence" in the face of it being "overwhelming" or be called an idiot. The types of people who malign skeptics are just as ugly and vindictive as religious zealots.
