I like my bacon crisp. I make sandwiches with it and stuff, or crumble into random things, so I fry up a pan at a time and save the drippings (in a bag in the freezer -put drippings in a plate, freeze, cut into small squares, then put in a freezer bag) for later to flavor things that might be better with a little bit of bacon fat. I put the crisp bacon in the freezer and pull out a piece or pieces as I need.

The other night, I dropped a pack of bacon in the pan, and for whatever reason, I dropped a package of button mushrooms in with the bacon. The mushrooms don't flavor the bacon, but the bacon sure does flavor the mushrooms. I drained it all off and then cooked the mushrooms in the little bit of grease on them until they had a little bit of golden brown color and all I can say is WOW. I bet they might not be as good cold as they are hot, but golden brown bacon flavored mushrooms were pretty Boss.

Try it sometime, if you ever get a wild hair for bacon and mushrooms. I've never seen a recipe that simple, but man, it was good. Like once a year good (my poor heart), but still... Good.

Whew - I thought you were going to point me to some content site where they were going to give me "Ten Reasons Why Bacon and Mushrooms Should be Avoided."

I like your idea of freezing the bacon grease, duh! I guess with cooking you are never too old to learn something new. Bet the mushrooms would be good in bacon grease, just about everything else is. I like my bacon crisp, really crisp, better for me to have it that way than not be able to eat it at all. When I saute mushrooms, in the past I've used butter, but I'm going to try bacon grease. We keep a cube of butter on the breakfast bar where we eat most of our meals, and even in the Summer it doesn't get too warm...

This is an excellent appetizer that was very well received by my guests. However, I’m not quite sure where you get 20 mushrooms large enough to handle 16oz of cream cheese. I used what I consider an appropriate appetizer size mushroom and I made over 50 and still had some cheese mixture left over. In the future, I will use this amount of ingredients for 60 mushrooms which I consider 20 servings 3 each per serving. For a smaller crowd, cut the ingredients in half. Per other reviewers, I placed a large rack on the baking sheet to elevate the mushrooms and keep them separated from the bacon grease and water that’s released from the mushrooms.

Where did this come from? I can't find an appetizer recipe or previous reference to cream cheese in this thread. I'm not complaining, I just feel like I missed something.

Oh yeah. Bacon and mushrooms. Drool.

I like to cook the bacon, pour off the fat, leaving the pan coated in bacon fat and then add lots of sliced onions and the mushrooms to cook until the onions are caramelized.

Bacon mushroom burger, here we come. Did I already say, "drool".
