I keep thinking, the canning season, for me, is over, then I decide to do just one more thing. Now, it is going to be okra. I have the okra, I bought the jalapenos to make it good and spicy and I have a couple of pint size jars left, so it looks like tomorrow is okra day. I won't make much, just a few jars of pickled okra with a bite to it.

I mopped the kitchen floor this morning. That's how I know canning is done ... for awhile.
I'll make applesauce in a month or two. But, unless I find another smokin' deal on a box of produce, I'm done. Whatever else the garden produces this summer - and it won't be much - will go into the freezer.

Have to smile cause I am thinking the same thing: I should get the darn floor cleaned up, but that is work: canning is fun!!!! I did do the okra, 2 pints and 3 1/2 pints. That is more than enough to last through the winter. I added jalapenos and onions to the jars. Now they have finished their bath and are cooling. I have to get the step ladder out and rearrange the cupboard to get everything in and make sure last years stuff, what is left, get put in front.
Did another 6 but notice the jar in the back. 2 down this year. It's always the bottom that breaks. I do have them sitting on a wire rack. Could just be bad jars.
I put a towel over them while they boil to ensure they don't bump or explode out..
I don't even want to think about re-arranging the pantry. Argh. A good job for a rainy day.
Ha! I had to do that when we got a new furnace this summer. The ceiling of the pantry was the entry to the attic. I found stuff from the early 2000s in there.

Well just wanted to let you know, I did the pantry yesterday: one entire section (actually cupboards next to the pantry) is reserved for the home canned stuff. The rest of the pantry is for the yucky stuff that comes from the market. Lucky for us, we have excellent storage space in our kitchen and laundry room. Now, I really do need to get my fat you know what up and do the kitchen floors. The house keeper comes next Saturday, I don't want her to see the floor so awful.

This is going to be my year to take a break from canning/freezing. The garden is doing very poorly. (Bad weather, bad gardeners!) I've kind of given up canning here at this altitude; even tomatoes have to be canned in a pressure cooker and they come out like mush. Easier to quarter and freeze them.
I enjoy canning. I can tomatoes, pickles, relishes, salsas, peaches, pears, cinnamon apples rings, spaghetti sauce, tomato sauce, sauerkraut and I also make alot jams and jellies.
