meemy, thanks for the tip on the freezing of the bananas. I am always rushing to make BB once the bananas get seriously over-ripe. That was Mom's advice...they should be practically black outside and mushy inside, and she was right, it makes all the difference. I never thought to freeze them!

My other secret for BB is to use buttermilk. And I use walnut pieces cut pretty coarsely (vs a fine chop) which gives fantastic texture.

My secret; I use at least four big bananas (which were already over ripe when they got tossed in the freezer) mashed semi thawed and covered with lemon juice and left to sit while the other ingredients are put together. And I add a small handful of finely chopped dried apples.

I'm not much of a baker either, but the other thing I'm often asked for is my Lemon Syrup Cake...it's dense and incredibly rich.
.

any chance of you posting the recipes for those? especially the banana nut bread

When I was first out on my own my family always said for me to bring deviled eggs & raw veggie tray with dip. I thought "wow" they really gobbled my food down. A few years later I found out they asked me to do those things because none of them like peeling the eggs or cleaning the fresh veggies.

I'm not let in the door if I don't have some kind of pie, cheeseball and homemade noodles.

Home-made reduced-sugar pies, cheesecakes, and gooey butter cakes-- that taste as good as the ones made full of sugar.

I also am Italian and I always get dinner requests for homemade spinach manicotti, sausage stuffed shells, or lasagna.
I'm also notorious for showing up to friends houses with a cream cheese iced chocolate cake.

Default What is your most favorite and signature dish that's special to you and your family?

I know some might have a few but I always loved seeing what is someone's special/signature dishes are.

Since my dad's family is from Spain/Cuba and I grew up in Miami, my signature dish would be roasted pork picnic/shoulder with mojo. It's labor intensive and takes hours and hours to cook. But in the end it's delish. My husband's dish is Carne con Papas, meat with potatoes. Another Cuban dish. It's basically beef cubes simmered in a saffron/tomato sauce with potatoes.

Chicken fricasee, my grandparents made it all the time when my mom was a kid and I make it now. My other dish would be my chicken cordon bleu, my mom made this for dinner every Easter, it was my Uncles favorite (R.I.P) Uncle , I make this a few times a year.
