Juvenile? Lame? Stupid?
It’s a coloring book full of Sport-related quotes. While the gift idea may seem unusual, after all the pages are colored in, the guy might like it that his woman put a lot of effort in coloring about a sport he loves. It would be kinda like reading a book.
I do like some sports but not a huge sporting fan. But if it's a coloring book that's tailored to what I like, then yes I'd love it. Gifts are always nice, and it's the thought behind them that means most to me.
I personally think adult coloring books are odd (though can't knock until I've seen them/tried them), but there's some charm to it coming from a girlfriend. Anything a woman puts thought/forethought and time into counts a lot more than the standalone/objective coolness (from his perspective) or monetary value of the gift. A person can buy the latter, not the former. If he thinks adult coloring books are stupid / you sense he thinks that, you can joke/debate about it, and the gift will remain unique and thoughtful in his eyes. Can't see it being a big miss, possibly a big hit.
I don't think my husband, a big fan of all kinds of sports, would enjoy it, but gifts should be chosen for the specific person based on their likes/dislikes.

Interesting? Unique? Cool?
Just buy him a sports-themed video game in whatever his favorite sport is.
