It’s a coloring book full of Sport-related quotes. While the gift idea may seem unusual, after all the pages are colored in, the guy might like it that his woman put a lot of effort in coloring about a sport he loves. It would be kinda like reading a book.

Could you take the idea and pivot it into something you could do together, like a puzzle with the same theme or a poster-sized thing that you color in together for fun?
That’d just make the kids cry coz the pictures are already colored in

Depends on the individual. I have a couple friends that love.. absolutely love... adult coloring books. They can be very intricate and a welcome mental distraction from daily stresses. The ones that I have seen are usually patterns and scenes. One of my friends even has an app on their phone that is a color by number exercise. The thing is that both of these friends are women. I've never seen a guy working an adult coloring book...
So I would err on the side of searching for an alternative gift. I don't think these coloring books are all that expensive. You can gift it together with another gift and see how he receives it. If he likes it, it would be an idea for another occasion...

I think the homemade concept is great; but I’m used to (what I would consider to be) ‘normal’ items i.e. my favorite dinner, a special dessert, the creation of love coupons - even a scrapbook/photo album/journal relative to the places we’ve gone together or a large frame/picture of her for my desk, etc. That said, a sports-related coloring book? Too funny. I like/prefer the gift to be her time i.e. when she goes to a game with me and asks questions/tries to learn re: basketball or football in order to enjoy it together - as much as possible anyway. I find that to be much more endearing/meaningful than sport-related quotes/a coloring book, to be sure. The latter is a bit nutty. :-)

I wouldn't call it "stupid" at all. Sure, it might be silly, but it DOES give the guy an insight into just what interests her. So, he could take this "art interest" one step further, for her.
Such as~
Go to one of those "decorate ceramics" stores, and decorate an item that you know she'd use.
Coffee cup/mug? Sure
Favorite cereal bowl? Yup, you bet.
Service platter? Absolutely!
Or anything else that the store has. YOU get to be creative. Have FUN with it!
Once it's fired, you get to bring it home and present it as something YOU DECORATED. Great for B~Day's!
In this world of goods made by faceless/anonymous people, having something/anything that is/was created by a loved one, should be more meaningful.
I'm sure you could analyze her psyche a step further based on her choice of medium:
A. crayons
B. pastels
C. colored pencils
D. markers
E. blood
F. watercolors
G. other
