The all say the same things. Just put a little different.
Example: John 3:16 NASB For God so loved the world, that He gave His only begotten Son, that whoever believes in Him shall not perish, but have eternal life.
NKJV: For God so loved the world that He gave His only begotten Son, that whoever believes in Him should not perish but have everlasting life
NIV:For God so loved the world that he gave his one and only Son, that whoever believes in him shall not perish but have eternal life.
King James: For God so loved the world, that he gave his only begotten Son, that whosoever believeth in him should not perish, but have everlasting life.

Correct, and the old testament bible is nothing bit a plagiarized version of the Torah...They say that imitation is the best form of flattery....

And it's been interpreted by every rabbi personally to mean just about anything.

No, they actually do not say the same things...Some are vastly different.
No, just take an effort to read the different versions...It will all become clear to you.
It's because human beings are sinful. People want to get a translation that is custom fit to their wants, or that are friendly to their particular sin.
Not all of them are for that reason....the ESV is a fairly new translation that is very true to the manuscripts...but that is in easy-to-read language. It is nice to have, as the NIV 84 is being phased out and the NASB is a little rigid and harder to read.
