Oh, wow... I suck badly at math. If I was to do it that way, it would take forever. Anyway, in response to your question: After sales tax is added. Because technically, the waiters are supposed to report their tips for tax purposes. That's why I also do it with cash, so that if I give more... it... would help them? My husband works in the restaurant business, you wouldn't believe some of the things the restaurant owners/managers do.
