I have been overdosing on kale salads. I love kale!

Any kale-based recipes or prep tips? I find it wilts pretty fast after I purchase it.

I love kale too! I read that it is best when it is "massaged" with a T spoon of extra virgin olive oil before using it raw.

My go to kale salad is very easy.

1 large bunch of kale, prepared as described.

2. 3/4 cup of chopped, salted cashews. You can use halved if you prefer.

3. 2 scallions (green onions) chopped small

4. 1 small can of this Asian rice noodles.

5. Mandarin orange segments.

6. Asian sesame ginger citrus dressing (I make my own but there are some decent ones out there - Ken's Steak House Light is good.


Combine first three ingredients in a salad bowl,

toss with 2 T of the sesame ginger dressing.

add Mandarin oranges.

Toss with thin rice noodles right before serving.

Enjoy!

I love kale rubbed with some fresh squeezed lemon juice, avocado, fresh tomato, and ground black pepper for a nice raw salad.

I chop it and add to my blender with frozen banana, berries, chia seeds, and plant milk for a smoothie.

I add it to bean and vegetable soups also, finely chopped.

One of my favorite dishes is sauteed black beans, chopped kale, steamed sweet potato, coconut milk, and curry and ginger spices.

I'd tried it coooked a couple of times and thought it was meh, but a few months ago I had met up with someone for lunch and ordered a salad that had some jake uin it (figuring I could just pick it out). Well, it was really good!

I love almost all veggies, especially the ones usually not like such as brussels sprouts, but I just can't eat kale. I have tried and tried, all ways, to eat it and just don't like it!

Same here. Kale and turnips are both unpleasant. I will eat kale if necessary.
