What's For Dinner Tonight (Veggie Version)? (cognac, paprika, egg, soy)

Tonight is a not-meatloaf. This will sound kind of strange, but it's walnuts, cottage cheese, onion soup mix (I make my own to avoid chemicals), corn/flax flakes---it really is very much like the real thing. Will make a mushroom gravy. Will serve with mashed sweet potatoes and green (is there really any other color?) peas.

The nut loaf doesn't sound strange to me. I just picked up a new (to me) cookbook at the library: One World Vegetarian Cookbook by Troth Wells. It seems to be very Brit-centric and there are two nut-loaf recipes in the book, both of which have piqued my interest.
One is vegan, and includes nuts, oats, seeds, beans, and apples ( as a binder?) with a caramelized onion sauce (I adore caramelized onions ) the other is a simple nut and bread mixture, with eggs as the binding ingredient. I've been trying to chose one to try over the holidays. I love the idea of serving it with "comfy" foods like mashed potatoes and peas or green beans.
Oh, and yeah, baked tofu is the bomb.
Tonight my SO is out riding (bicycles) with the boys, so I'm just munching on apples and pears with a nice sharp cheddar and a handful of almonds.

TDNA, I'm impressed---homemade ravioli. Do you make the squares of pasta yourself?
I must say---we all eat very well. Carnivores have nothing on us!
I do. It's very easy. You just divide the dough in two (or 4, to make smaller and easier to handle pieces) and roll them out , place spoonfuls of the filling on one, lay another rolled section of dough on top, cut into squares and seal the edges.
