It does! I love root vegetables at this time of year. I am making a red lentil, sweet potato, carrot, and apple soup later this week. I have been searching high and low for red lentils but all my regularly-visited stores are out.
I bought some dried ****ake mushrooms at Costco, and rehydrated them, I added them to pasta sauce. These were really good, and meaty.
So, I am going to be playing with these new mushrooms for awhile. Costco has some really interesting things for vegetarians, a sprouted bean mix, black bean burgers, veggie sausage.
Lentil stew with lentils, onions, garlic, tomatoes, carrots & potatoes. Even Mr Hubby who is not a big lentil fan liked it in this thick stew.
