Bongo, good for you for eating potatoes instead of acting like they are poison like so many people do! I'd eat that dinner, although probably with scrambled tofu (I'm not vegan, but try to avoid eggs.)

Large baked potato (lightly coated with olive oil and rolled in sea salt then baked at 400 degrees until soft inside and crispy outside)split and topped with fresh cracked pepper, snipped green onions and fresh chives.

We live off-the-grid & potatoes keep a long, long time. I much rather eat yams, butternut squash, etc. but Mr. Hubby likes potatoes. And he is the egg eater of the family; I rarely eat an egg.

Gnocchi with butternit squash, tomatoes, dried mushrooms, sage, and a little cognac. With a spinach salad.

This experiment didn't turn out so hot. I made the noodles too thin and the sauce too thick. I won't be saving the leftovers.

Super-spicy vegetarian tacos.

Yellow corn tortillas, charred over an open flame, black bean paste, black beans, rice, corn, crumbled tofu simmered in a chili garlic oil/tomato/green onion sauce with cumin and smoked paprika, Mrs. Renfro's ghost pepper salsa, El Yucateco green habanero sauce, crumbled goat cheese.

And this is what I had last night:

Korean marinated potatoes, napa kimchi, hot pepper and ginger/soy protein dumplings, and spicy ponytail radish noodles w/kimchi and pickled garlic shoots.

Seriously, if any of you are in the greater LA area, I'd be happy to have you over sometime. Gets dull over the holidays when all your friends are out of town!
