    • Food Protection (Thawing procedures not met 3-501.13, p 79)
      A large bag of chicken wings and cut up chicken breasts sitting on the counter thawing. The chicken wings are partially thawed with most areas still frozen. and the cut chicken breats are at 41 degrees or lower. There are four acceptable ways to thaw food safely. In a refrigerator at 41 degrees or lower. Under running water at 70 degrees or lower. In a microwave oven. As part of the cooking process. Chicken placed in the cooler. CORRECTED ON SITE.

      Rice, flour, soy sauce and oil is being stored on the floor in the back room. All food needs to be stored at least 6 inches off the floor.
  • Warewashing
    • Adequate warewashing facilities (Test kit requirement not met 4-501.116, p 128)
      Need to provide chlorine test strips to check concentration of sanitizer solutions.
  • Plumbing/Water/Sewage
    • Hot & cold water under pressure (Inadequate capacity of water system (hot/cold) 5-103.11, p 147)
      No hot water available throughout the establishment. Water did not get hot during the hour of inspection. Has a 40 gallon electric water heater. Need to have adequate hot water supply to meet demands before opening. Suggest calling a plumber to check the unit.
  • Facility/Equipment Requirements
    • Food contact surfaces (Food contact surfaces, characteristics 4-101.11, p 101)
      Food is being stored in used plastic bags which are not considered a clean surface. Need to store food in food grade bags or washable food grade containers. Newspaper is being used as a liner at the grill area shelf. If using newspaper or other non-cleanable surface, it must be changed every 24 hours. Bulk products (flour, cornstarch, etc) have scoops without handles stored in the products. Need to provide scoops with handles and store them so the handle is out of the product. One wooden spoon was discarded during inspection.
    • Food contact surfaces (In-use utensils, between use storage 3-304.12, p 65)
    • Non-food contact surfaces (Nonfood-contact surfaces exposed to food: cleanable, nonabsorbent 4-101.19, p 104)
      Bare wood is showing on the edges of the counter at the front counter/make table area. Need to paint these surfaces with 2 coats of paint or varnish to make the surface smooth and cleanable.

    • Inside physical facilities designed/maintained (Uncovered receptacle ladies toilet room 5-501.17, p 160)
      Need to provide a covered receptacle in the restroom.
