Must be smooth, cleanable, durable, and nonaborbent. 2)Floor coving loose under the handsink aree in prep/warewashing room, reattach to aid cleaning. 3)Has two plastic racks, one in RR and one just outside RR door, both holding non food items, set up with lowest rack very close to floor, need to clean underneath to prevent buildup of debris which could attract pests, if possible raise lowest rack to be at least 6 inches off floor, or do not use this style shelving when needing to replace unit.

Observation:Observed plastic cambro stacked while still wet, must allow to fully air dry before stacking for storage.

Observation:Has fly sticky strips hanging from ceiling in warewashing/prep area, one is very near the 3 part sink and one very near the dry storage rack, move more to center area or exterior door area where is not directly over food or food service items.

Has two plastic racks that sit directly on floor, not adjustable, one in kitchen and one in RR, must provide shelving that is adjustable so lowest shelf can be at least 6 inches off floor to aid cleaning.
