  • Test kit provided and used to measure sanitizing solution concentration
    Observation: Test strips for Quat sanitizer were soiled and expired. Manager Sean stated new test strips would be ordered with next food order.
  • Using a handwashing sink- operation and maintenance
    Observation: Several cardboard boxes were being stored on top of handwashing sink near 3 compartment sink. Sean (manager) moved boxes during inspection and will speak to staff about proper usage of handwashing sink.
  • Drying mops
    Observation: Several mops were being stored on ground and in mop buckets. Spoke with manager sean about importance of air drying mops and proper mop storage.
  • Equipment location, installation, repair, and adjustment
    Observation: Walk in cooler is missing door handle and screwdriver with rubber bands is being used as replacement. Manager Sean stated new handle has been ordered. Invoice for new handle is to be provided to Health Department upon receipt.

    Observation:1)Several cracked ceramic tiles in kitchen and prep area with warewashing, plans underway to replace flooring. Must be smooth, cleanable, durable, and nonaborbent. 2)Floor coving loose under the handsink aree in prep/warewashing room, reattach to aid cleaning. 3)Has two plastic racks, one in RR and one just outside RR door, both holding non food items, set up with lowest rack very close to floor, need to clean underneath to prevent buildup of debris which could attract pests, if possible raise lowest rack to be at least 6 inches off floor, or do not use this style shelving when needing to replace unit.
  • Air drying of equipment and utensils
    Observation:Observed plastic cambro stacked while still wet, must allow to fully air dry before stacking for storage.
  • Insect control devices are properly designed and installed
    Observation:Has fly sticky strips hanging from ceiling in warewashing/prep area, one is very near the 3 part sink and one very near the dry storage rack, move more to center area or exterior door area where is not directly over food or food service items.

    Has two plastic racks that sit directly on floor, not adjustable, one in kitchen and one in RR, must provide shelving that is adjustable so lowest shelf can be at least 6 inches off floor to aid cleaning.

    1) One spray bottle is not registering sanitizer at minimum concentration, discarded and refilled with correct concentration of sanitizer, corrected. 2) Is stacking warewashing containers before fully air dry, must allow to air dry fully before stacking, corrected.

    1) RR door has hole in both outside and inside surface, repair or replace to have smooth, cleanable surfaces. 2) Provide self closure mechanism for door so is tight fitting to prevent pests from entering. 3) Clean floor in back end dry storage area under pizza box storage esp. 4) Has wet mop in bottlom of mop bucket, must position mop to air dry in a manner not to soil walls or equipment.

    Has one spray bottle of sanitizer hanging on dry storage rack above food items, provide separation from food and clean equipment for all chemicals. Corrected on site.
