KDA_3_50116A2 - --There were four containers of waffle mix 72F, a container of shredded cheese 60F and a container of approximately 20 sour cream packets 51F on the self service counter. PIC stated the cheese and sour cream were removed from refrigeration this morning at 6AM and the waffle mix was prepped at 6AM. COS- PIC moved sour cream packets to refrigerator in back for rapid cooling and will be using time as a public health control for the shredded cheese and waffle mix. Both will be voluntarily discarded at 9:30AM.
KDA_4_20211A2 - --There was a plastic food storage container with a large crack along the food contact surface stored as clean on a shelf below the prep counter. COS- PIC voluntarily discarded.
KDA_4_90311A - --There was a box of single service aluminum pans stored directly on the floor in the back storage area.
KDA_7_20111B - --There was a container of chemical sanitizer stored on top of a box of Dole syrup in the back storage area. COS- PIC moved the chemical to a different area.
