Beverage packages observed on basement floor. All food/beverage packages must be elevated at least 6 inches from the floor on NSF/ANSI approved dunnage racks.
- Cold Holding Potentially Hazardous Foods (46.385(a)(2)-(a)(5))
Cold foods are being held above acceptable cold-hold temperatures. Cold foods must be held at 41 degrees F or below. See temperature log (pg.2). Please Note: Food employee was asked to discard jar of red hot sausage. Label on jar reads "refrigerate after opening". Temp of sausages was at 72.2 degrees F at time of inspection.
