    Remove mouse dropping on shelving in rear storage areas.

  • Duties of the Person in Charge (46.102)
    The Person in Charge did not demonstrate adequate knowledge of the PA Food Code. Food safety person did not properly explain proper sanitization procedures for cleaning utensils.
  • Equipment in Good Repair & Proper Adjustment (46.671)
    Toaster oven and non-commercial freezers are present and in usage. Freezer unit in basement is defective and inoperable due to fire, owner has chicken and beef stock, butter and dough packed with dry ice inside defective unit. THIS ONLY A TEMPORARY SOLUTION TO MAINTAIN PROPER COLD TEMPERATURE. REPAIR OR REPLACE UNIT IMMEDIATELY. Reach-in unit used to stored bottled beverages and cheese on 1st floor is in of repair, back wall of unit is peeling paint.
  • Sanitization Requirements, Frequency and Methods (46.731)
    Observed no chemical sanitizer being used on equipment and utensils after washing and rinsing them, and prior to use. Food service employee stated that after wash and rinse procedure, utensils are not sanitized. Also he mentioned that "Windex" is used to clean slicer unit. ORDERS: Cease this currently food service operaton immediately. Sanitarian explained proper procedure.
