* Sliced turkey meat was held at 54 degrees F, pepper jack cheese was held at 60 degrees F, sliced tomatos was held at 57 degrees F, raw salmon was held at 52 degrees F, diced cheese was held at 51 degrees F and diced cheese was held at 61 degrees F rather than 41 degrees F or below as required.

* Cutting boards observed with deep scratches and scoring not allowing for effective cleaning and sanitizing. * CO2 tanks are not properly secured, during time of inspection, where it is needed.
- Hot Water Sanitization Temperature, & Chemical Sanitizing Using Detergent-Sanitizers in Manual Warewashing (46.676(d)(e))
* The quarternary ammonia concentration in the sanitizing solution of the 3-bay warewash sink was less 100 ppm, rather than 200 ppm as stated on the manufacturer's use directions.
