- 229.167 (e) (2) no soap. Observed no soap in the dispenser located in the hand washing sink next to three compartment sink. Supply every hand washing sink with soap.
- Ch 13, Art IV, section 13-112(a)(1) and (2) CFM. A food establishment shall employ at least one person assigned to each shift of twelve (12) or fewer hours who: (1) Meets the "person in charge" definition found in the Texas Food Establishment Rules; and (2) Has a valid and current food manager's certificate issued by the director. Manager must show proof of Food Manager Certification. Once a valid Food Manager's certification is obtained, proceed to 1901 S. Alamo (DBSC) Health Department desk to purchase ($15.45) a Metro Health ID.

- Please provide soap and *paper towels at all handwashing facilities at all times. (a). Paper towels necessary at handsinks located in both men's and women's restroom. (b). Paper towels necessary at handsink located by three compartment sink at all times.
- Please provide for proper use of sinks, as follows: (a). Handwashing facilities shall be used for handwashing only--please provide a handwashing only sign, or a sign that illustrates the proper steps for handwashing. (b). Provide for three compartment sink to be used to wash/rinse/sanitize equipment and utensils only. (c). Mop sink is provided for proper disposal of mop water or similar waste. --cigarette bud observed in handsink located by three compartment sink. In addition, please do not store items (damaged goods) on handsink located in production area.
- Provide for all toxic chemcals to be labeled properly--contents does not correspond with outside generic label. In addition, provide for all toxic chemicals to be stored properly--observed in various areas of store--should be stored properly away in a designated area.
- Provide for all non food and food contact surfaces to be clean and sanitary. Production area needs attention--please clean and sanitize food contact surfaces, as well as lids of food items. Please clean handle to oven, and ensure single-service spoons for condiments are not being re-used; observed single-service spoon stored in condiments container in refrigeration unit--a new spoon is necessary, and food contents should not be reserved.
- Provide for most current inspection report to be posted in public view, as well as actual food permit.
