    Correction: Protect food on display by the use of packaging - counter, service line, or salad bar food guards - display cases - or other effective means to prevent contamination.

    Observation: Observed a deep pan of mashed potatoes placed in top well of prep unit while hot.
    Correction: Prep wells are not designed to cool product. Spread into a shallow pan and leave uncovered in the walk in cooler to cool quickly.

    Observation: Observed in disrepair: water inside line prep unit (salad), rusty racks in walk in cooler.
    Correction: Repair or replace.

    Correction: Food moved to walk in cooler. Called for service.

    Observation: Observed in need of cleaning: inside salad prep unit.
    Correction: Maintain nonfood-contact surfaces of equipment clean.

    Observation: Sinks at bar drain slowly due to a possible drain collapse. Ice machine condensate line drips directly onto floor.
    Correction: Repair bar drain lines. Adjust line to drip into floor drain.

    Correction: Replace.

    Observation: Observed in disrepair: wall damage by mop sink (lower wall), worn floor tile grout in dish machine area, lower wall damage at bar under sinks.
