OK to use commercially pre-made items such as salads, as long as they are kept in containers that are in ice, and temperature of salads is 41F or below. Must discard at end of day any leftovers. No problems noted. Well organized.

Hot dog cart is a push style cart in excellent condition. Menu is posted, hot holding consist of three inserts, the hand washing sink is attached and adequate storage space is provided. Coverage is supplied by a portable umbrella which is assembled when the cart is in use. Owner will be required to attend the next available Certified Food Managers course. Proper food management and personal hygiene were discussed with the owner at the time of the inspection. All other requirements have been met. Health Permit to operate the cart has been issued.
