THE FOLLOWING NOT CLEAN INTERIOR OF COOLER FAN GUARD COVERS, DOOR SEALS,DOOR TRACKS , FRYER DOORS, AND WALK-IN COOLER STORAGE RACKS.
The floors shall be constructed per code, be smooth and easily cleaned, and be kept clean and in good repair.OBSERVED THE FLOORS NOT CLEAN UNDER THE FRYERS, WOK STATION REAR PREP, AND STORAGE INSTRUCTED TO CLEAN.
The walls and ceilings shall be in good repair and easily cleaned.OBSERVED DIRTY WALLS IN FRONT, REAR, AND SIDE STORAGE INSTRUCTED TO CLEAN AND REPAINT. OBSERVED SEVERSL WATER DAMAGED CEILING TILES FRONT, PREP, AND REAR STORAGE INSTRUCTED TO REPLACE.

INSTRUCTED COLD POTENTIALLY HAZARDOUS FOODS MUST BE KEPT AT 40F OR BELOW. FOOD ITEMS DISCARDED, V=$80. CRITICAL CITATION ISSUED, 7-38-005[A].
Equipment and utensils should get proper exposure to the sanitizing solution during the rinse cycle. Bactericidal treatment shall consist of exposure of all dish and utensil surfaces to a rinse of clean water at a temperature of not less than 180F. OBSERVED EMPLOYEE, WASHING AND RINSING MULTI-USE UTENSILS AND SETTING THEM TO DRY WITHOUT USING A SANITIZING METHOD. EMPLOYEE DID THE SAME ROUTINE FOR 5 TIMES WHILE I WAS OBSERVING HER.(EXPOSED HAND SINK IS CLOSE TO HER BUT SHE NEVER WASH HER HANDS). INSTRUCTED MANAGER THAT ALL EMPLOYEES HAS TO WASH THEIR HANDS AFTER HANDLING MONEY, AFTER HANDLING DIRTY TRAYS, BEFORE PREPARING THE FOOD AND AS NEEDED. CITATION ISSUED CRITICAL 7-38-010A.
