Ventilation: All plumbing fixtures, such as toilets, sinks, washbasins, etc., must be adequately trapped, vented, and re-vented and properly connected to the sewer in accordance with the plumbing chapter of the Municipal Code of Chicago and the Rules and Regulations of the Board of Health. Some bathroom sink faucets have loose knobs (one at first floor boys room & in 2 bathrooms inside classrooms), must fix.
All food and non-food contact surfaces of equipment and all food storage utensils shall be thoroughly cleaned and sanitized daily. Most cabinets under sinks in several classrooms must be kept tidy/clean.
The floors shall be constructed per code, be smooth and easily cleaned, and be kept clean and in good repair. Floors under dry storage shelves at first floor storage room & some classrooms at same level, must be kept clean, with stuff/stock elevated off the floor for easy access to cleaning.
The walls and ceilings shall be in good repair and easily cleaned. WALL SECTION OF A STORAGE ROOM AT THE EAST SIDE OF THE CAFETERIA MUST BE FIXED-IN POOR REPAIR.
All dishwashing machines must be of a type that complies with all requirements of the plumbing section of the Municipal Code of Chicago and Rules and Regulation of the Board of Health. NOTED 3-COMP SINK IN MAIN KITCHEN NOT ADEQUATELY DRAINING (DRAINING VERY SLOWLY ON ALL 3-SINK DRAINS). MUST CLEAN & MAINTAIN.

THE DRINKING FOUNTAINS ON THE 2-3rd FLOOR BATHROOMS HAVE VERY LOW WATER PRESSURE. ALL CLEANPLATES/BOWLS MUST BE KEPT DRY & STORED UPSIDE DOWN; UTENSILS STORED WITH HANDLES UP, TO PREVENT CONTAMINATION. Containers and utensils shall be inverted, covered, or otherwise protected from contamination until used. All single-service drinking straws and containers shall be discarded immediately after use.

ALL FOOD PREP STAFF MUST WEAR HAIR RESTRAINTS AT ALL TIMES IN PREP AREAS.
