OBSERVED THE SALAD PREP COOLER WITH AN AIR TEMPERATURE OF 50F. UNIT WAS USED TO STORE POTENTIALLY HAZARDOUS FOODS. UNIT TAGGED HELD FOR INSPECTION. MUST MAINTAIN AIR TEMPERATURE OF COOLER BELOW 40F. CRITICAL VIOLATION 7-38-005A.
All cold food shall be stored at a temperature of 40F or less. OBSERVED POTENTIALLY HAZARDOUS FOODS AT IMPROPER TEMPERATURES. OBSERVED COOKED CHICKEN WINGS AT 46F, BLUE CHEESE DRESSING AT 48F, GOAT CHEESE AT 49F, CUT VEGETABLES AT 48F. MANAGEMENT VOLUNTARILY DISCARDED 15# OF FOOD WORTH $30. MAINTAIN COLD FOODS BELOW 40F. CRITICAL VIOLATION 7-38-005A.
The area outside of the establishment used for the storage of garbage shall be clean at all times and shall not constitute a nuisance. OBSERVED EXCESSIVE GREASE ON THE TOP AND SIDES OF THE GREASE DUMPSTER. MUST MAINTAIN THE GREASE DUMPSTER CLEAN. SERIOUS VIOLATION 7-38-020.

INSTRUCTED TO CLEAN & SANITIZE ALL AFFECTED AREAS & ELIMINATE SOURCE. All necessary control measures shall be used to effectively minimize or eliminate the presence of rodents, roaches, and other vermin and insects on the premises of all food establishments, in food-transporting vehicles, and in vending machines.
ANY FAN GUARDS/CONDENSERS OF MOST COOLERS, ATTACHMENTS BEHIND THE COOKING EQUIPMENT & THE GASKETS OF BAR COOLER MUST BE FREE OF DUST, GREASE OR FOOD STAINS. All food and non-food contact surfaces of equipment and all food storage utensils shall be thoroughly cleaned and sanitized daily.
ALL RUSTY SHELVINGS IN THE WALK-IN COOLER MUST BE RE-SEALED. ALL CUTTING BOARDS WITH DEEP, DARK GROOVES MUST BE REPLACED. All food and non-food contact equipment and utensils shall be smooth, easily cleanable, and durable, and shall be in good repair.
ANY MILK CRATES USED FOR DRY OR COLD STORAGE RACKS MUST BE REPLACED WITH REGULAR SHELVINGS, FOR EASY ACCESS TO CLEANING & PEST MONITORING. ALL CLEANING EQUIPMENT (DUST PANS, BROOMS) MUST BE CLEANED & HUNG TO DRY.
