(7-38-005A) IMPROPER FOOD STORAGE. FOUND A PAN OF PAR-COOKED CHICKEN STORED ON THE VERY BOTTOM PART OF A WHEELED CART (INSIDE WALK-IN COOLER), BELOW THE TRAYS OF RAW FISH & RAW MEATS. INSTRUCTED TO STORE ALL COOKED FOOD ITEMS ABOVE THE RAW FOOD PRODUCTS. All food should be properly protected from contamination during storage, preparation, display, service, and transportation.
ALL FOODS STORED IN COOLERS MUST BE DATED & LABELED, INCLUDING BULK FOOD CONTAINERS. All food not stored in the original container shall be stored in properly labeled containers.
CUTTING BOARDS WITH DEEP/DARK GROOVES MUST BE REPLACED. ICE BIN LIDS NEEDED AT THE BAR-MUST PROVIDE. All food and non-food contact equipment and utensils shall be smooth, easily cleanable, and durable, and shall be in good repair.
