Critical: The person in charge did not ensure that employees are properly sanitizing equipment or utensils. PIC was not aware of the sanitizing step in dish washing. To prevent contamination, the person in charge shall ensure that employees are properly sanitizing cleaned multiuse equipment and utensils before they are reused. PIC shall be knowledgable on how to sanitize and at what concentration utensils should be sanitized.
A food packaged in the facility did not contain a label. Dry foods such as seasonings and flour not labelled. Foods shall be labeled as specified in this rule. Label all containers of food to ensure proper identification.
Equipment food-contact surfaces and utensils were not being sanitized. Utensils were washed and rinsed but not sanitized (per PIC). Equipment food-contact surfaces and utensils shall be sanitized. PIC was instructed on how to sanitize utensils. Sanitize all equipment and utensils with approved chemical sanitizer to eliminate bacteria.
The plumbing system was not properly maintained. Pipe in food prep sink is leaking. A plumbing system shall be properly maintained. Repair sink to ensure all plumbing is properly maintained.

Standard Inspection
Critical: Observed improper method for cooling TCS foods. Observed deep container of covered stew cooling in cooler at 145F. Cooling shall be accomplished in accordance with the time and temperature criteria by using one or more of the methods based on the type of food being cooled as required in this rule. Establish cooling method of stew by either using a chill stick, ice baths, or shallow pans - to 70F within two hours and 70F to 41F within four hours - to limit bacterial growth. A handwashing sink shall be maintained so that it is accessible at all times for employee use. Remove fan from in front of handsink and remove uneccessary items from sink.
