Chicken fries were not discarded at 3pm as was indicated on the label. It was 20-25 minutes later that they were discarded. Cheese was not labeled with a discard time. Label times properly and discard leftover product at correct discard times.

GC Clean floors under the ice machine and repair damaged or missing floor tile around the drain.

GC Employees preparing sandwiches are touching the food often during preparation. Use gloves or tongs to prepare food to reduce hand contact with food.

GC Keep dumpster doors closed at all times.

GC Raise the bottom shelf of the shelving to be min. 12 inches above the floor. Keep items in the outside storage room min. 12 inches above the floor on the shelving. If shelf is portable or easily moved, it can be min.6 inches above the floor.

GC The slicer and some lids & pans needed additional cleaning today. Wash, rinse, and sanitize dishes properly before returning to use. Sanitizer was around 200 ppm for chlorine sanitizing in the 3 comp. sink. Clorine sanitizer shall be at least 50ppm. Recommend maintaining concentration at 50-100ppm as was found in the buckets today.

Jacket condensate lines with an easily cleanable wrap such as Projac. Discard pans that have excessive carbon buildup on them. Repair the cabinet door at self service area. Repair the walk-in freezer to prevent condensate drips..

Pans and plastic bins were stacked wet. Air dry dishes before stacking.

Reminder: Clean in use tongs every two hours.

Walk-in freezer was leaking and dripping condensate from the ceiling and fan area onto the food boxes below. Pan was put under the condensate drain as a temporary fix and the boxes are to be kept closed until the problem can be fixed. Bucket of pickles was on the floor and needs to be up of the floor at all times. Ice bin lid at drive thru was propped open and is designed to close after each use. Do not prop open the lid.
